Why engraving forces the material choice
Engraving cuts into metal. On a plated piece, the cut goes straight through the coating - which is measured in fractions of a micron - so the letters are the first place base metal appears. Within a year the engraving is the most worn part of the piece.
That is the opposite of what you wanted from an engraved graduation gift, and it is entirely avoidable: engrave into solid sterling or solid gold. Sterling is affordable and any jeweler can work on it for the next fifty years.
Steel also takes engraving and holds it permanently, though it costs more to engrave because the metal is hard.
