The short answer
Karat is gold content out of 24 parts. 24K is 99.9% pure, 18K is 75%, 14K is 58.3% and 10K is 41.7% - the US legal minimum for calling something gold. The rest is alloy that sets hardness and color.

The conversion table
Karat marks are a fraction out of 24, so converting is arithmetic rather than convention. A stamp reading 585 and one reading 14K say exactly the same thing: the European system states parts per thousand, the US system states parts out of twenty-four.

What the other percentage does
The non-gold portion is not filler - it is what makes gold wearable. Pure gold is soft enough to deform with ordinary handling, so alloying is not a cost-cutting measure but a functional necessity for anything with prongs, links or a clasp.
The alloy also determines color. Yellow gold uses copper and silver in balance. Rose gold pushes the copper up. White gold uses white metals - historically nickel, now often palladium - and is almost always rhodium-plated to get the bright white finish people expect, which is why white gold rings need re-plating every few years while yellow gold ones do not.
Reading a hallmark
On a real piece you will find one of a few marks: a karat number followed by K or KT (14K, 18KT), a millesimal number (585, 750), or a qualifier. The qualifiers are the ones that matter, because they change the meaning entirely:
- GF or 1/20 14K GF - gold-filled. The gold is a bonded layer at 1/20 of total weight.
- GP, GEP, HGE - gold plated, gold electroplated, heavy gold electroplate. A coating.
- RGP - rolled gold plate. Bonded like gold-filled but at 1/40 of total weight, so half the gold.
- Vermeil - gold over sterling silver at a minimum of 2.5 microns.
A karat number with any of these letters after it describes the surface, not the piece. That single reading habit resolves most jewelry confusion.
What each karat costs you and gives you
Price scales roughly with gold content, so 18K costs about 29% more gold than 14K for the same weight. What you get for that is color depth and lower reactivity. What you give up is hardness.
The practical guidance: 14K for rings and chains worn daily, 18K for earrings, pendants and anyone with reactive skin, 10K only when budget is the binding constraint and you know you are not nickel-sensitive.

Common questions
What does 585 mean on gold?
585 parts per thousand gold, which is 58.5% - the millesimal way of writing 14K. The two marks mean the same thing; European makers tend to use the number, US makers the karat.
Is higher karat gold always better?
No. Higher karat means richer color and less alloy to react to, but also a softer metal that scratches and bends more easily. For a ring worn every day, 14K usually outperforms 18K in practice.
What is the lowest karat that can be called gold in the US?
10K. Below that it may not be described as gold under the FTC guides, which is why UK 9K pieces cannot be sold as gold in the US even though they are legal there.
Does the karat affect tarnishing?
Indirectly. Gold does not tarnish, but the alloy metals can, so lower karats show surface discoloration more readily. It cleans off and does not damage the piece.
